At work, we are busy planning a graduation and anniversary celebration, and have been talkin’ Mexican cuisine with Martin from La Mesita Catering. Needless to say, I’ve been craving cheesy, meaty, spicy goodness for weeks! Cinco de Mayo couldn’t come at a better time!

Alright, so you’re going to have to Google-translate this recipe, because it is in Spanish. I was looking for a mushroom empanada recipe that I have hiding in an unknown cookbook, but when I came across this one, with a combination of beef, raisins and olives, I couldn’t resist it!



02 –  Honey Lime Tequila Shrimp Tacos with Avocado, Purple Slaw and Chipotle Crema (via Tartine and Apron Strings)

With a name like that you know it’s going to impress! And just look at that beautiful piece of work. I’m glad  you can’t see me right now; I’m actually drooling.


03 – Mexican Fruit Cups (via Foodie Misadventures)

I was told the other day that large Mexican meals usually have fruit as a dessert… Not really my style, but here’s a twist on a regular fruit offering. A nice little palate cleanser if you’re like me and are heading to the dessert table 🙂


04 – Pork Carnitas (via Food Is Luv)

Someone on Pinterest commented that this recipe made the best carnitas that they had ever had. I know people always say that, but I’m hopeful, because they look so darn good. Give them a shot and let me know!



05 – Homemade Horchata (via Love and Olive Oil)

Creamy, refreshing, yummy, and dairy-free! I’m sure it also tastes good with a splash of rum in there! (Is that blasphemous?)


06 – Mexican Tinga Tostadas (via How Does She)

My go-to appetizer whenever I’m at a Mexican restaurant are tostadas. I love how the flavours come together and crispy base. Yes, they’re messier than taquitos, but you can’t fit so much deliciousness into a thin roll, can you? My point exactly.



07 – Creamy Chicken Enchiladas (via Lemon Tree Dwelling)

These are the kind of enchiladas I make for my folks. They’re a non-spicy, and are packed with cheesy, creamy calories that satisfy even the most non-adventurous eaters. Have people that say they don’t like Mexican food? Makes these. They’ll love them!


08 – Spicy Mayan Truffles (via Cooking On The Weekends)

I made a batch of these delightful, spicy, chocolatey morsels when we had a Burrito Dinner Party, but added some extra cayenne because I like it HOT! My future mother-in-law was not a fan though. Make sure you warn people. Or don’t, and laugh when their face gets a little red and they go get a glass of milk. (I’m terrible!)

09 – Pepino Cocktail (via A Fabulous Fete)

Cool off those burning taste buds with this refreshing (and intoxicating!) drink.  The cucumber can make you feel better about all those dinner calories you just consumed.



10 – Queso Fundido con Chorizo (via Mrs. Happy Homemaker)

This is another one of those recipes that I’ve been craving since we chatted with the caterer. Gooey cheese, spicy chorizo… I want some – now.


11 – Churro Cheesecake Bars (via Oh Bite It)

I also made these for the Burrito Dinner Party. They’re easy, yummy, and use Pillsbury crescent rolls. I’d say that makes it a winner.

12 – Mexican Corn Dip (via Damn Delicious)

Of course, I had to put one vegetable dish on this list. It might not be the healthiest of sides, with mayo and cheese in it, but hey! YOLO 😉
