Squash: it kinda reminds you of autumn, doesn’t it? I feel like maybe I should be posting recipes that inspire thoughts of the warmer days ahead. I must admit – I’m tired of winter. I’m ready for long hot days, and air conditioning, and not having to scrape my windshield. But since there are still some wintery days before us, I figured that this was as good time to do a winter squash recipe round-up. That, and I have a lovely little acorn squash looking to be transformed into a plate of deliciousness. I grew up in a house that just boiled or roasted our squash. To be honest, I really like a bowl of plain old boiled, buttered, and sugared squash. It tastes like home. It tastes like comfort. It tastes like healthy candy. But here are 10 recipes that push the envelope a little bit more – in flavours, effort, and impressiveness:

Acorn Squash Pizza with Bacon, Shallot Confit, Taleggio, Arugula, and Aged Balsamic (recipe from Zen Can Cook)

Seriously, if you aren’t drooling over this pizza then there is something wrong with you. I’m not even sure we can be friends anymore. This combines everything I love into one amazing dish: squash, bacon, arugula, PIZZA! Oh man.

Baked Stuffed Acorn Squash (recipe from the New York Times)

My go-to recipe for acorn squash is always to make it stuffed. It’s so easy and tasty. Make this one, with the addition of beans and corn, or just clear out the fridge and mix whatever you’ve got into the flesh with some breadcrumbs. Really, it’s just that easy.

Ottolenghi Roasted Butternut Squash and Red Onion with Tahini and Za’atar (recipe posted by Duchess Roz)

You may know that I have an affinity for Middle Eastern cuisine. I used to have a kilo of za’atar that I never knew what to do with, unless I was making sfeeha pizzas. Here is a recipe to use up that za’atar and tahini that you bought once and never used again! It’s also quite economical (minus the pine nuts!).

5-ingredient Butternut Squash Fritters (recipe form Just a Taste)

Fried stuff is soooo good. Well, not good for you, but man, does it ever taste good! I’m a big fan of fritters (especially my future mother-in-law’s corn fritters), but here is an easy one made out of squash. Maybe I’ll make up a batch of these for Deep Fried Christmas this year 🙂

Streuseled Acorn Squash Muffins (recipe from Pretty Plain Janes)

Of course, squash isn’t just for side dishes and vegetarian mains, they can also be for dessert. Here is a recipe to satisfy your sweet tooth. Throw in some nuts and sultana raisins and you’ve got king of a morning glory coffee cake!

Butternut Squash, Arugula and Bacon Quiche (recipe from Gimme Some Oven)

If you don’t have any of the leftover squash and bacon pizza to have for breakfast, then here is a great alternative. Anything tastes good in a quiche, but this combination would be bursting with flavour (especially since it calls for blue cheese!).

Skillet Butternut Squash, Sausage and Penne Pasta (recipe by Mel’s Kitchen Cafe)

What kind of recipe roundup would this be if I didn’t include a pasta recipe? Here’s an easy one to whip together for a weeknight dinner. And, it’s a one-skillet wonder, which makes it even better because who likes doing dishes anyways?

If you love squash as much as I do, make sure you try out a few of these recipes. Tell me what you think, and tell me what your go-to is when you have one sitting in the cellar.

Happy Feasting!
